
I love seeing my kids’ faces light up when they bite into chocolaty sweet goodness. Hell, I light up when I’m indulging in that kind of goodness.
Recently, rain and snow have kept me trapped indoors with two energetic monkeys, so baking has become our go-to activity.
Let me first say, I am no baker. I’ve got limited time but more importantly, I want my skinny jeans to still fit at the end of the week.
Enter these kickass Healthy Oatmeal Chocolate Chip Cookies. They’re so easy, my 3-year-old’s class baked a batch this week. We burned them and they still tasted awesome!
Healthy Oatmeal Chocolate Chip Cookies(Nut-free, Gluten free, Dairy Free)

1 ½ cups Gluten Free rolled oats
1 cup shredded coconut
½ tsp salt
1 tsp cinnamon
½ tsp allspice
¼ cup ground flaxseed
½ cup chocolate chips
3 large or 4 small ripe bananas, mashed
¼ cup natural oil
1 tsp vanilla extract
Preheat oven to 350F. Line baking sheet with parchment paper.
In large bowl combine all dry ingredients, except chocolate chips.
In another bowl combine mashed bananas, oil and vanilla.
Pour dry ingredients into wet ingredients. Combine well and mix in chocolate chips.
Spoon up balls and slightly flatten them onto baking sheet. Bake for 20 minutes or until edges turn golden brown.
