Green St. Paddy's Day Cookies

Grain-free on St. Patty’s Day? You betcha!  

I love these because they're bright green without using any crappy food coloring. Spinach is the secret ingredient. But don’t worry, you’re vegaphobe loved ones won’t have a clue!

Green Chocolate Chip Cookies (Gluten-free, Grain-free)

         Ingredients:

         1 cup packed spinach

         1/4 cup extra virgin coconut oil

         4 Tbs of maple syrup

         3 eggs

         2 tsp vanilla extract

         5 Tbs + 1 tsp coconut flour

         1/4-1/2 cup of chocolate chips

         1/4 tsp salt

Preheat Oven to 350.

Use food processor to finally chop spinach. 

Throw coconut oil in processor and blended with spinach.

Pour in maple syrup and blend again.

Now add eggs, salt and vanilla and blend again.

Transfer the bright green mixture to a bowl. Add one Tbsp of coconut flour at a time, continuously mixing by hand until blended.

Throw in chocolate chips and mix.

On a greased cookie sheet, use a tablespoon to scoop up balls of dough and  place on cookie sheet. Slightly flatten each to cookie shape.

Bake 15 minutes.
